Eating Healthy in College + Recipe

One thing I know a lot of students struggle with is eating well in college. With the convenience of Chipotle, Subway, and pizza it’s so easy to not want to A) cook, B) spend money on groceries, and C) cook. While I also like to treat myself with pizza once in a while, grocery shopping and cooking for yourself can be more beneficial to not only your body, but your wallet.

Since I started living on my own, I have been in LOVE with cooking. Yes, eating a vegetable and fruit heavy diet can be expensive, but not if you do it right. Going to local farmers markets and meal prepping are some of my favorite resources. Right now, I’m on my journey of developing recipes and dishes that gives my body the nourishment it needs. When I get lazy and don’t want to cook, I sure am happy that I buy foods that are whole, instead of snacking on potato chips. Now, that being said, I may or may not have a bag of peanut butter M&M’s in my cabinet. But, like I said, everything is good in moderation!

So, get up and nourish your body! Below is my favorite açaí bowl recipe with some pro tips to help you!

PRO TIPS:

-Buying frozen fruit is way cheaper and easier! It helps get the thick consistency you want.

-You don’t have to follow this exact recipe! Put whatever fruits you love! I love to mix it up with mango.

-I typically add a splash of orange juice to give a little more flavor and to thin out the mixture if it’s too thick.

-This bowl has a ton of antioxidants from the açaí/blueberries and natural sugars,  so I like to make it more whole with my toppings to add fiber, omegas, and grains.

 Açaí Berry Bowl

Serves: 1

Time: 10 minutes

What you need:

1 pack of açaí

5-7 frozen strawberries

1 banana (frozen or thawed)

1/2 cup of frozen blueberries

Plant based milk (I use almond and just pour it until I get the consistency I prefer!)

Handful of kale and/or spinach

Splash of orange juice

Optional toppings:

Cocoa nibs (my favorite), ground flaxseed, diced fruit, granola, chia seeds, honey

My bowls tend to change quite a bit, but this is the go-to recipe I love. Feel free to mix it up with your favorite fruits and toppings! Eating healthy and whole is about finding what you like and exploring!
